Enzyme Assisted Extraction of Phenolic Compounds From Mandarin Peels

Abstract

In this research, enzyme assisted extraction of phenolic compounds from mandarin peels were studied, and ideal extraction conditions were determined to extract phenolic compounds with high yield from them.  It was determined that the extraction time and liquid/solid ratio for the peel were 60 minutes and 10 liquid/solid (mL/g), enzyme activity was 0.13 U/mL. Under these conditions, extracted total phenolic compounds from mandarin peels were found as 1.83 mg GAE/mL, while their extracted total flavonoid compounds were determined as 1.42 mg QE/mL. It was found that total phenolic and flavonoid yields and antioxidant activities of the extracts obtained enzymatically were higher than those obtained by conventional extraction methods.  The results showed that enzyme assisted extraction method was suitable method to obtain bioactive compounds from mandarin peels.
